I am in the process of writing a cookbook, and need to build recipes, and make them my own
I am writing a cookbook that has many family safe, as well as allergy safe recipes. I am developing recipes for people with gastro-intestinal diseases, that may not be able to eat as much (such as celiac, crohn's or IBS). I want my kids to be able to enjoy foods they see on tv, but may contain alcohol, so I will rework them without the alcohol.
Very little alcohol actually cooks out in normal cooking, baking removes the most but still leaves some, typical stovetop prep leaves almost all (the fancy flambé only removes about 5%). Alcohol is classified as a toxin, and I am not comfortable giving it to my small children
